I second the vote for Gran Turismo 4 on the PS2. No body kits, neons or other cosmetic doodads in the game, only performance modifications which produce a noticeable effect on the vehicle's capabilities (customizing the engine/performance).
In short, it will give you as real of a simulation of the car as possible in a video game. The only thing that could top it would possibly be Gran Turismo 5 for the PS3, but I haven't messed with it yet (don't got a ps3). But when it comes down to it, there's no substitute for driving the real thing. I know that firsthand, comparing my 1987 Mazda RX-7 to the in-game equivalent, a 1985 Mazda RX-7 GT-Limited (FC,J).
In GT4, you'll be looking for a Celica with ST20x in the name, the "x" being a variable depending on the trim level of the car. ST201 through ST204 are front wheel drive, while ST205 is the 4WD GT-FOUR (AKA All-trac Turbo).
