It's possible that it's the coolant sensor, but first you should look into the gasoline you are putting into it.
If you recently changed brands or grades, this could be causing your problem. Also, in the winter, gasoline is formulated differently. My FJ Cruiser loses about 3 miles per gallon in the winter because of the winter formula for gasoline (higher MTBE content per gallon).
If you haven't changed your brand or grade of gas, then you might want to take the car to a mechanic who can run a diagnostic on the computer and it can tell you what is actually wrong with the car.
Have you checked the air pressure in your tires? This can cause lower gas mileage as well.
