what fluid must be changed on the toyota line? How often and Why?

All the fluids, at the manufacturer's recommended intervals, because they stop working.

It depends on what fluids you're talking about, but eventually all of them will need to be replaced because for lack of a better term they wear out.

The Replacement fluid can last longer than the original. Like how Dex-Cool radiator fluid will last 100,000 Miles compared to 30K for the green stuff.

Synthetic Motor Oil can go at least 5K in between oil changes while conventional is better at 3K.

You'll have to look it up for your individual Car/Truck but every single fluid down to the Diffs and Transfer Case will need to be replaced.

depends on which year toyota you have. some toyotas have long lasting transmission fluid and coolant. some don't.

but i do recommend flushing brake fluid and p/s fluid every 2 years or 30k miles. if the transmissiong fluid is dexron III i recommend flushing it every 30k miles as well. if the transmissiong fluid is the toyota T-IV, flush it when it starts to get dark.

same thing with the coolant. if it's green, every 30k. if its red, every about 60-90k. if it's pink, it's the long lasting 100k miles stuff.

if you have a manual transmission or a 4x4 vehicle, i recommend replacing those fluids every 30k miles.
