Go right ahead. Unlike an old fashioned car, the engine speed is only loosely coupled to the vehicle speed, so the break in problem where the engine runs at only one speed doesn't happen in the Prius (I'm not convinced it happens in any recent model car). Just don't drive more than about 60 for the first 600 miles (like it says in the manual), avoid racing the engine, and try to avoid hard braking during the first 300 miles and you'll be fine.
If it were me, I'd also be sure there is plenty of air in the tires. 44/42 was a good pressure for the 2004-2009 OE tires, but check the tire sidewall to see the maximum cold inflation pressure. Don't assume the dealer put in a decent amount of pressure.
