First thing the VVTI is standard on all Toyota Engines so you can stop adding that to your questions. It has nothing to do with the problem.
Is it actually overheating? or is the Temp Gauge above where you want it?
The Head Gasket has NOTHING to do with an overheating problem.
If you've changed everything and it's still overheating, change the Radiator.
Or take it to a Shop and have them look at it.

Slightly higher than normal is NORMAL. If it's overheating it will go very high.
Since you did all this work to it, you had to refill the Radiator. It's probally overfull now and when it heats up that extra water has to go somewhere.
That's right it goes to the overflow tank, and if that's full it spills over onto the ground. If you keep filling it when it does this it'll keep overflowing.
If it's going a few degrees over don't worry about it. It's fine.
When it really starts to overheat, then yes you have something to worry about. Then you should take it to a shop because there's something going on you can't diagnose over the internet.
