Ive been looking into celicas, but what does the GT mean versus a regular celica?

Trim level. GT will have more options that make it sportier. These could include engine, tires, wheels and suspension options as well as other accessories. The GTS has even more. I am sure if you use a search engine and look up the specific year and model you will find plenty of information.
