You already have coil overs! That is the way Mcpherson struts are made. So stiffer springs are the only option and maybe some spring stiffeners to stop the tire from bottoming out far enough to cause the tire rub. Most adapters to make the suspension adjustable are designed to provide for lowering which is not something you want.
More then likely the problem is not the 17" tires, but the wheels. They have the wrong offset and maybe are just down right to wide for the tire well. The only solutions are to find the right wheel offset or to flare the fenders more. The flaring of the fenders will require either fender blisters and or cutting the body.
It might prove cheaper to find the right offset tire combination that works. A cool looking car that does not handle is not something to desire.
