I would recommend having both hands on the wheel at the 10 and 2 position and try not to "jiggle" the steering wheel too much when following the road. I find it difficult to follow the winding roads while using one hand because of resistance from the wheel. With two hands, it feels much better to me. It may also help if you position your seat closer to the steering wheel, if you feel as though you lack control over the wheel.
