When talking about cars and their engines "the head" often refers to the cylinder head block of the engine. It's where all the valves and fuel injectors are situated. I would take a bland comment, without further explanation, about wear on the cylinder head to be referring to the valve seats which can wear and start to regress on high milage engines so that the valves don't seat and seal properly when closed, this can cause poor running of the engine and increased fuel consumption through lost compression.
Ther are several things they could be talking about sometimes it shows corrosion around the water jackets and ports and sometimes it shows pre detition marks on the area that is directly over the piston and cylinder the other is if the engine was run hot it could show stress cracks ont the head hope this helps
I'd never trust someone that says a head is "showing signs of wear". To condemn a cylinder head you need to do a compression test or if it's a coolant loss problem a pressure test of the cooling system to see if the head gasket is leaking, that would be a possible warped cylinder head from overheating or a bad head gasket.
Signs of wear...bad wiper blades because you can't see out the window.
Car pulls when steering wheel is held loosely, bad tires and/or alignment, or worn suspension parts.
Noise when braking, worn out brake pads and/or rotors.
