One thing to try is to remove the thermostat, put the housing back together, and try driving around. If your temperature stays cool with the thermostat out, the first thing to do is replace it (yes, the dual stage is helpful for maintaining flow while the cooler, heater core water is pouring on it). If you're still running hot, you can look at other things like a blocked radiator.
Are you getting in oil in the water or vise versa? If not, the head gasket's probably okay.
Try the thermostat first--it's the easiest.
