Hold your key in the inlet like you are letting air out of a tire. Only hold it for a few seconds. If any kind of liquid comes out then your system is fine, but your compressor is bad. If only air comes out then you have no freon and have some kind of leak somewhere.
Just whoever serviced it last maybe forgot to vacuum it down first. That's really weird for it to be anything over 100 psi.
But to answer your question, no your car is not going to explode. You may only hear a loud Pop and rushing air for a moment one day if it gains too much more pressure.
