Your 2007 Tundra is what we call a Fly By Wire vehicle. Having no mechanical linkage between the accelerator pedal and the Throttle Valve. This means that a sensor detects how much or how little you are pressing the gas pedal and then sends a signal to the comp that then tells the throttle sensor how much to open or close. The Transmission Computer also uses this info and alot more from various other sensors to determine what gear to be in and when.
All that to say we have had alot of similar complaints, with the only issue being that the computer was thinking and reacting to your braking request and then suddenly had to react to your acceleration request. If the timing is just right then the Transmission Computer could be in the middle of shifting to meet the demands of one request when the other request comes in giving it a momentary "Jerk" or "Harsh Shift" while it resolves which gear it really needs to be in to give you what you want.
That said, it is always a good idea to have your local dealer use their computers to confirm that this is only a minor "hiccup" and not an actual issue that could cause you to lose performance from your nice truck.
